Alaskan Hailbut is a very mild fish with thick white flaky flesh. They are best for grilling, baking; pan-searing and in soup. When grilling hailbut cooks pretty fast. Keep a close eye on it to avoid overcooking. A 1-inch halibut steak will finish grilling in about 10 minutes over a medium-high heat. Thinner cuts and fillets can cook in as little time as 6 minutes. Turn once during cooking to avoid having the halibut fall apart.
