Notice these scallops are called "Bay Scallops." Why? Because they are not deep sea scallops. The word SEA is used in front of scallops that are deep sea/diver scallops only.
True to its name; they are found within the shallow waters of the bay. They are a bit smaller than sea scallops (deeper sea), but much tender. Which makes them more interesting and tempting than sea scallops. Their texture is similar to crab or lobster just a little more firmer. Bay scallops has a sweet and delicate flavor. When cooked properly, scallops are soft and chewy but should not be rubbery or tough.
