Notice these scallops are called "Bay Scallops" and not "Bay Sea Scallops." Why? Because there is no such thing as "Bay Sea Scallops." The word SEA is used in front of scallops that are deep sea/diver scallops only.
True to its name; they are found within the shallow waters of the bay. They are a bit smaller than sea scallops, but much tender. Which makes them more interesting and tempting than sea scallops. Their texture is similar to crab or lobster just a little more firmer. Bay scallops has a sweet and delicate flavor. When cooked properly, scallops are soft and chewy but should not be rubbery or tough.
